This is a common problem when installing a previous edition of Windows after the latest version. The chosen selection is to always install the latest after the older one or more versions are already installed. The newest version's installer will find those and routinely add them into the boot options menu.
Among XP and Vista you are running into two totally different boot loaders. But it will only get a little effort to see XP added into the Vista BCD store.
The following image will show you how the EasyBCD tools add or remove entry screen looks. This screen was captured even as both XP and Vista were current on the system here now change totally by Windows 7
