You can't uninstall an operating system. You have to format the partition it's on. still I believe you are utilizing GRUB boot loader. It is written on the boot sector and will entirely screw up your system if you simply format the Ubuntu partition. Boot from your Windows DVD to retrieval and attempt to recover the Windows boot loader, then format your Ubuntu partition.
