As per my understanding there is not much more that a server operating system that can do in the home use than might be done with say Win2k/XP Pro. Actually, it sounds like what you are been looking to just share files and/or media. This can be done very well, with good security, with any "Pro" edition of Windows 2k/XP. The server editions can also give the advantages of using the Active Directory and also generating the domains which are been normally good if you want to control what your users can or can't do. In homes this can be careful enhancement it.
That all being said you can make use of the "Server" edition just like the regular "Pro" editions to share with your files with a good security if it is all set up and you just want to put it to use. The server that you built is probably has the capability to be very scalable (upgradeable) and able to hold huge amounts of info/data. So, if you are looking for a file server this would be great to share out your stuff.

At least, W2k Server might also make up with the use of a quad-core processor, or a dual-core with HT. The Pro also limits to a dual-core or two mono cores. But the XP and W2k3 also count the HT as a single processor for licensing it.
